Is there a way to update the times associated with the directions once you've started your trip? For example, if I'm 15 min late to the first "checkpoint" all the following should be pushed back by 15 min or the times really are useless. The only way I could find to do this was recalculate the route, and then set the start trip time to the current time but that results in the fuel warnings, and rest reminders to change times so you'll never hit them.

Any ideas?

I'm afraid that is all there is in S&T for now. Let us hope next year version will keep on adding more GPS related functions like Microsoft has been doing for the past two versions.
